After receiving photos from so many of you of my watermelon pico that you made, I decided to give you anotha recipe to keep you dipping for the rest of the summer. And what other fruit screams all things tropical and summertime?! PINEAPPLE!!! That’s right, today you’re getting the recipe for my favorite pineapple salsa!
Similar to my watermelon salsa, I use the fruit itself to make the bowl that holds the salsa. Isn’t it darling?!?! This makes the salsa perfect for entertaining, bringing to that summer BBQ, or just eating alone in front of the TV during a Netflix binge. Like my watermelon salsa, it’s delicious on tacos, particularly seafood ones! Try it with my shrimp taco recipe or with my favorite flank steak recipe! If you plan on making this ahead of time cover your pineapple bowl very tightly with cling wrap and keep the salsa separately in a mixing bowl until it’s serving time. This will help to keep all the amazing juices in the salsa.
Let’s get started.
Step 1: Build that bowl. Let’s make the pineapple bowl. Slice about 1/3 of the pineapple off, leaving the stem intact. Slice the pineapple around the perimeter and then make a few cuts across. Use a spoon to loosen these cut chunks you’ve created. Scoop the chunks out with a spoon. Pour the extra juice into your large mixing bowl. Dice all of the pineapple into small pieces
Step 2: Chopaholic. Let’s get all that other goodness chopped up. Finely chop your red onions and your jalapeño. These should be the smallest of all salsa components. Next chop your tomatoes. These should be around the size of your tomatoes.
Step 3: Mix a lot! Combine all of your chopped fruits and veggies into a large mixing bowl. Add juice of two limes, salt and pepper. Add hot sauce. Add chopped cilantro. Mix to combine.
Step 4: Bowling. Add your salsa to your pineapple bowl. Serve!
Tropic like it’s hot {pineapple salsa}
Ingredients
- 1 pineapple to use as the bowl
- 2 cups diced pineapple
- 4 roma tomatoes diced
- 1/2 small red onion diced
- 1/3 cup chopped cilantro
- 2 limes juiced
- 1/2 jalapeno diced very small
- 1/4 tsp black pepper
- 1-2 teaspoons hot sauce depending on how spicy you want it (I use Cholula)
- 1/8 tsp salt
