I am a huge fan of Trader Joe’s frozen pie crusts. They are buttery, and flaky, and make easy work of throwing a delicious pie or galette together when you don’t have the time or energy to make pie crust from scratch. Hello lazy cooks (myself included), this one is for you!!!! The crust is so good that no one is ever going to guess that it’s not homemade. This galette tastes like you slaved hours over it when it truly only took about 10 minutes to throw together. Doesn’t that make you want to just rush out to the store from some fresh blueberries right now!?
This blueberry galette is perfect for entertaining. It makes a gorgeous addition to a brunch spread and an out this world dessert served warm with vanilla bean ice cream or fresh whipped cream. If you know you have guests coming in town and staying with you, this would be the perfect thing to pop into the oven for when they wake up in the morning. Is there anything better than waking up to the smell of fresh baking pie and coffee being made!? These are the type of barefoot contessa thoughts that are always in my head.
The most wonderful thing about making galettes is that they don’t need to look perfect. I’m always way more impressed with how the ones with the crooked crimped edges or filling that has slightly bubbled over the sides look and photograph so beautifully. They look handmade, imperfect, and rustic which adds to their charm. Simple, but delicious. I can’t wait for you to give this a try!
Let’s get started.
Step 1: Dough boy fresh. That the Trader Joe’s pie crust according to the directions on the package. After this leave the crust on your kitchen counter for about 15 minutes before you take it out of the box. Remove it from the box. If any of the pieces of the crust have seperated when you roll it out, use a rolling pin or you hands to smooth them back together.
Step 2: I have fillings for you. Let’s make that pie filling. Combine blueberries, Trader Joe’s Bourbon Vanilla Extract, lemon juice, lemon zest, sugar, salt, and flour in a mixing bowl.
Step 3: Spread em. Line a baking sheet with parchment paper. Spread your pie crust across it. Spoon blueberry mixture onto center of dough, leaving a 1 1/2-inch border around edge.
Step 4: Big Crimpin’. Fold edge of dough over 1 inch of blueberry mixture making pleats. Then dot the blueberry filling mixture with the small butter pieces. This will make the berries glisten. Brush the pie crust with some of beaten egg and sprinkle with remaining teaspoon sugar.
Step 5: Wake up and small the bakin’. Preheat oven to 425. Bake 25 to 30 minutes checking the galette towards the end until the blueberry filling is bubbling and pastry is golden. Cool slightly on baking sheet on a rack. Garnish with lemon zest, powders sugar and ice cream.
